Sodium benzoate, also known as sodium benzoate, is an organic matter, chemical formula C7H5NaO2, is a white granular or crystalline powder, odorless or microbenzoin odor, slightly sweet, astringent taste, relative molecular mass of 144.12, stable in air, soluble in water, its aqueous solution pH value of 8, soluble in ethanol. Benzoic acid and its salts are broad-spectrum antimicrobial agents, but their antimicrobial effectiveness depends on the pH of the food.


The antiseptic mechanism of sodium benzoate is as follows: benzoic acid has strong lipophilicity, easily crosses the cell membrane into the cell, interferes with the permeability of the cell membrane of bacteria and molds, and inhibits the absorption of amino acids by the cell membrane. The benzoic acid molecules entering the cells inhibited the activity of microbial cell respiration enzyme system, and reduced the reaction rate of phosphofructokinase catalyzed by anaerobic respiration by 95%, thus playing a preservative role.
